Fish and Chips Recipe

Fish and chips is a classic British favorite — a plate of crisp, golden fish fillets and fluffy fries. Simple to make and delicious, this dish is ideal for lunch, dinner, or a weekend treat. This recipe serves 4 people.

Ingredients

For the Fish:

  • 4 white fish fillets (cod or haddock), about 5–6 ounces each

  • 1 cup all-purpose flour (plus a bit more for dusting)

  • ½ cup cornstarch

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 cup cold sparkling water or beer

  • Oil for deep frying

For the Chips:

  • 4 large potatoes, peeled and cut into thick slices

  • Oil for frying

  • Salt to taste

Preparing the Chips

  1. Soak the sliced potatoes in cold water for 30 minutes to remove excess starch.

  2. Drain and pat dry with a clean kitchen towel.

  3. Heat oil in a deep fryer or large pan to 300°F (150°C). Fry the potatoes for about 5–7 minutes until just tender but not browned.

  4. Remove and drain on paper towels. Let them rest until ready for the second fry.

Making the Fish Batter

  1. In a bowl, combine the flour, cornstarch, baking powder, salt, and black pepper.

  2. Gradually add the cold sparkling water or beer, whisking until smooth and slightly thick.

Frying the Fish

  1. Heat oil in a deep pan or fryer to 375°F (190°C).

  2. Pat the fish fillets dry with paper towels and dust with a little flour.

  3. Dip the fish into the batter until fully coated.

  4. Carefully lower the fish into the hot oil and fry for about 4–5 minutes until crisp and golden.

  5. Remove and place on a paper towel-lined plate to drain.

Final Fry for the Chips

  1. Heat the oil again to 375°F (190°C).

  2. Fry the pre-cooked chips for an additional 2–3 minutes until golden and crisp.

  3. Drain on paper towels and sprinkle with salt.

Serving

Serve the crisp fish and chips with tartar sauce, a wedge of lemon, and malt vinegar. Pair with mushy peas for a traditional touch if desired.

Storing

Fish and chips are best enjoyed freshly made, as the crisp coating can lose its texture if stored.
