Masala Chai Recipe

Masala chai is a spiced milk tea from India, brewed with black tea, whole spices, milk, and sugar. It’s strong, fragrant, and warming—perfect for mornings or chilly afternoons. The name means “spiced tea,” and each household has its own blend. This recipe makes enough for 2 cups.

Ingredients

  • 1 cup water

  • 1 cup whole milk (or plant milk)

  • 2 teaspoons loose black tea (like Assam) or 2 black tea bags

  • 1–2 teaspoons sugar (adjust to taste)

Whole spices:

  • 4 green cardamom pods, lightly crushed

  • 4–6 black peppercorns

  • 1 small cinnamon stick

  • 2–3 cloves

  • A small slice of fresh ginger (or ¼ teaspoon dried)

Brewing the Chai

Add water, milk, and all the spices to a small saucepan. Bring it to a boil over medium heat.

Lower the heat and simmer for 5 minutes so the spices release their flavor.

Add the tea and sugar. Simmer for another 2–3 minutes, or a bit longer for a stronger brew.

Straining and Serving

Strain the tea into cups using a fine mesh strainer.

Serve hot, as is. Masala chai goes well with biscuits, toast, or savory snacks.

Masala chai is about balance—strong tea, warm spice, just enough sweetness. Once you’ve made it a few times, you can adjust the spices to your taste. It’s a drink with deep roots, made for slowing down.
