Mont Blanc with Chestnut Purée Recipe

 Mont Blanc is a French dessert that looks like a snow-capped mountain and tastes like autumn on a spoon. It’s made from sweet chestnut purée, piped into thin strands over whipped cream and a crisp meringue base. The textures—airy, smooth, and crunchy—come together in every bite. This recipe makes 4 individual servings.

Ingredients

For the meringue:

  • 2 egg whites

  • 100g (½ cup) sugar

  • 1 teaspoon lemon juice or vinegar

For the whipped cream:

  • 200ml heavy cream (cold)

  • 1 tablespoon powdered sugar

  • ½ teaspoon vanilla extract

For the chestnut purée:

  • 200g sweetened chestnut spread (store-bought or homemade)

  • 100g unsweetened chestnut purée

  • 1–2 tablespoons milk or cream (to loosen the texture)

  • 1 teaspoon vanilla extract

  • Optional: 1 tablespoon dark rum or brandy

Making the Meringue Base

Preheat the oven to 100°C (210°F). Line a baking sheet with parchment paper. Whip the egg whites with lemon juice until soft peaks form, then slowly add sugar and continue to whip until stiff, glossy peaks appear.

Pipe or spoon 4 small round meringue discs onto the baking sheet, about 6–7 cm wide. Bake for 1½ hours until dry and crisp. Turn off the oven and leave them inside with the door ajar to cool completely.

Whipping the Cream

Whip the cold cream with powdered sugar and vanilla until soft peaks form. Chill until ready to assemble.

Preparing the Chestnut Layer

Mix the sweetened chestnut spread with unsweetened purée. Add vanilla and a splash of milk or cream to loosen the texture until smooth and pipeable. Add a bit of rum or brandy if using. Spoon into a piping bag fitted with a small round or multi-hole tip.

Assembling the Mont Blanc

Place one meringue base on each plate. Spoon or pipe a mound of whipped cream on top. Pipe the chestnut mixture in fine strands over the cream, fully covering it to resemble a little mountain.

Optional: Dust with powdered sugar for a snowy effect.

Serving

Mont Blanc is best chilled, but not too cold. Serve shortly after assembly to keep the textures distinct.
