Sindhi Biryani is known for its rich layers of spiced rice, marinated meat, and aromatic flavors. With its perfect balance of heat, tang, and fragrance, it’s a festive dish enjoyed on special occasions. This recipe serves 6 people.
Ingredients
For the rice:

3 cups basmati rice

Water for boiling

2 bay leaves

4-5 whole cloves

4-5 black peppercorns

2 green cardamom pods

1 cinnamon stick

For the meat masala:

1 kg (about 2.2 lbs) mutton or chicken pieces

1 cup plain yogurt

2 large onions, thinly sliced

2 tomatoes, chopped
-
3-4 green chilies, sliced

2 tablespoons ginger-garlic paste

½ cup chopped fresh coriander
-
½ cup mint leaves
-
1 tablespoon red chili powder
-
1 teaspoon turmeric powder

2 teaspoons ground coriander
-
2 teaspoons ground cumin
-
½ teaspoon ground black pepper

Salt to taste

Juice of 1 lemon

¼ cup oil or ghee
For layering:

2 boiled potatoes, cut into cubes

Fried onions (for garnish)

A few drops of yellow food coloring (optional)

2 tablespoons warm milk (to mix with food coloring)

Extra mint and coriander leaves
Preparing the Rice
Rinse the rice thoroughly and soak for 30 minutes.
Boil water with whole spices and salt.
Add the soaked rice and cook until 70% done.
Drain and set aside.
Preparing the Meat Masala
Heat oil in a large pot over medium heat.
Fry sliced onions until golden brown.
Add ginger-garlic paste and stir for 1 minute.
Add meat pieces and cook until they change color.
Stir in yogurt, tomatoes, green chilies, and all dry spices.
Cover and cook on low heat until the meat is tender and oil separates.
Stir in chopped mint, coriander, lemon juice, and boiled potatoes.
Layering the Biryani
In a heavy-bottomed pot, spread a layer of meat masala.
Top with half of the rice.
Sprinkle some fried onions, mint, and coriander.
Add the remaining rice and repeat the toppings.
Drizzle colored milk on top for a traditional look.
Cover tightly and steam (dum) on very low heat for 20–25 minutes.
Serving
Gently fluff up the biryani before serving.
Serve hot with raita, salad, or pickles.
