Ingredients
For the crust (you can also use store-bought):
2 1/2 cups all-purpose flour
1 cup (225g) unsalted butter, cold and cubed
1/2 teaspoon salt
6–8 tablespoons ice water
For the apple filling:
6 cups peeled and thinly sliced apples (Granny Smith or Honeycrisp work well)
3/4 cup granulated sugar
1/4 cup brown sugar
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 tablespoon butter (to dot on top before baking)
For topping:
1 egg (for egg wash)
1 tablespoon milk
Extra sugar for sprinkling
How to Make Apple Pie
Make the crust:
In a large bowl, mix flour and salt. Add cold butter and use your fingers or a pastry cutter to work it in until the mixture looks like coarse crumbs.
Add ice water, one tablespoon at a time, mixing just until the dough comes together. Divide in half, shape into discs, wrap in plastic, and chill for at least 30 minutes.
Prepare the filling:
In a large bowl, toss sliced apples with both sugars, cinnamon, nutmeg, flour, and lemon juice. Set aside while rolling the dough.
Assemble the pie:
Preheat the oven to 200°C (400°F).
Roll out one disc of dough and fit it into a 9-inch pie dish. Fill with the apple mixture, spreading it evenly. Dot with small bits of butter.
Roll out the second disc and place it over the apples. Seal and crimp the edges. Cut small slits on top or create a lattice if you like.
Whisk egg with milk and brush it over the top crust. Sprinkle with a little sugar for a golden finish.
Bake:
Place the pie on a baking tray to catch any drips. Bake for 45–50 minutes or until the crust is golden and the filling is bubbling.
If the edges brown too fast, cover them with foil.
Cool for at least 2 hours before slicing so the filling sets.
