Arroz con Pollo Recipe

 Arroz con Pollo means “rice with chicken” in Spanish, and it’s a beloved dish across Latin America, with each region adding its own twist. This version brings tender chicken simmered with fragrant spices, vegetables, and rice all cooked in one pot. The result is a comforting, colorful, and deeply flavorful meal. Ingredients

  • 4 bone-in, skin-on chicken thighs (or a mix of thighs and drumsticks)

  • Salt and black pepper to taste

  • 1 teaspoon ground cumin

  • 2 tablespoons olive oil

  • 1 small onion, finely chopped

  • 3 garlic cloves, minced

  • 1 red bell pepper, chopped

  • 1 green bell pepper, chopped

  • 1 cup medium- or long-grain rice, rinsed

  • 2 cups chicken broth

  • 1/2 cup tomato sauce or 2 medium tomatoes, blended

  • 1/2 teaspoon ground turmeric or a pinch of saffron (for color)

  • 1/2 cup peas (fresh or frozen)

  • 2 tablespoons chopped fresh cilantro or parsley

  • 1 lime, cut into wedges (for serving)

Instructions

1. Season and Sear the Chicken

Pat the chicken dry and season it with salt, pepper, and cumin. Heat the olive oil in a large pot or deep skillet over medium-high heat. Add the chicken pieces, skin-side down, and sear until golden brown on both sides. Remove and set aside.

2. Sauté the Vegetables

In the same pot, lower the heat to medium. Add chopped onion, garlic, and bell peppers. Sauté until the onions are soft and translucent.

3. Add the Rice and Tomato Base

Stir in the rice and cook it for 1–2 minutes to coat the grains in the oil and flavor. Add the tomato sauce and turmeric or saffron. Stir well to combine.

4. Return Chicken and Add Broth

Place the seared chicken back into the pot. Pour in the chicken broth, making sure the rice is fully submerged. Bring to a boil, then reduce to a low simmer. Cover and cook for 25–30 minutes, or until the rice is cooked and the chicken is tender.

5. Add Peas and Finish Cooking

Once the rice is nearly done, stir in the peas. Let the dish sit covered for another 5 minutes off the heat to allow everything to absorb.

6. Garnish and Serve

Sprinkle with chopped cilantro or parsley before serving. Serve with lime wedges for a fresh citrusy touch.
