Classic Meatloaf Recipe

 Classic meatloaf is a timeless American dish made from ground meat mixed with breadcrumbs, eggs, and seasonings, then baked to tender perfection and topped with a sweet ketchup glaze. It’s a family favorite that pairs perfectly with mashed potatoes, roasted vegetables, or a crisp salad. This recipe serves 6.

Ingredients

For the Meatloaf:

500g ground beef (or a mix of beef and pork)

1 small onion, finely chopped

2 garlic cloves, minced

¾ cup breadcrumbs

⅓ cup milk

1 large egg

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon ground black pepper

For the Glaze:

¼ cup ketchup

1 tablespoon brown sugar

1 teaspoon mustard (yellow or Dijon)

Instructions

1. Prepare the Meat Mixture

In a large bowl, combine the milk and breadcrumbs. Let it sit for 2–3 minutes until soaked.

Add ground meat, chopped onion, garlic, egg, ketchup, Worcestershire sauce, thyme, salt, and pepper.

Mix everything gently with your hands or a spoon until just combined. Don’t overmix—it keeps the meatloaf tender.

2. Shape and Place

Preheat oven to 180°C (350°F).

Shape the meat mixture into a loaf and place it on a lined or greased baking tray or in a loaf pan.

3. Add the Glaze

In a small bowl, mix ketchup, brown sugar, and mustard.

Spread half the glaze over the top of the meatloaf before baking.

4. Bake the Meatloaf

Bake for 50–60 minutes, or until the internal temperature reaches 70°C (160°F).

Halfway through baking, brush with the remaining glaze.

5. Rest and Slice

Let the meatloaf rest for 10 minutes before slicing. This helps the juices settle and gives cleaner slices.

Add finely grated carrot or zucchini for extra moisture and nutrition

Use fresh breadcrumbs or panko for a softer texture
