Creamy Mushroom Risotto Recipe

 Creamy mushroom risotto is a classic Italian rice dish made by slowly stirring Arborio rice with broth, sautéed mushrooms, and Parmesan cheese. The result is a creamy, flavorful bowl with tender rice and a deep mushroom flavor. It’s ideal as a cozy main or elegant side. This recipe serves 4.

Ingredients

For the Risotto:

1 cup Arborio rice (short-grain risotto rice)

2 tablespoons olive oil or butter

1 small onion or shallot, finely chopped

2 garlic cloves, minced

200g (about 2 cups) mushrooms, sliced (button, cremini, or mixed)

½ cup dry white wine (optional)

4 cups vegetable or chicken broth (kept warm)

½ cup grated Parmesan cheese

2 tablespoons butter (for finishing)

Salt and black pepper to taste

Fresh parsley for garnish

Instructions

1. Sauté the Mushrooms

In a large pan, heat 1 tablespoon oil or butter over medium heat. Add mushrooms and cook until browned and soft, about 5–7 minutes. Season lightly with salt and pepper. Remove from pan and set aside.

2. Start the Base

In the same pan, add another tablespoon of oil or butter. Sauté chopped onion or shallot until soft and translucent, about 3–4 minutes. Add garlic and cook for 30 seconds more.

3. Toast the Rice

Add Arborio rice to the pan and stir for 1–2 minutes until all the grains are coated and slightly translucent at the edges.

4. Add Wine (if using)

Pour in the white wine and stir until it’s mostly absorbed by the rice.

5. Add Broth Gradually

Begin adding warm broth, one ladle at a time. Stir frequently and wait until the liquid is mostly absorbed before adding more. Continue this process for 18–20 minutes until the rice is creamy and tender but still has a slight bite.

6. Add Mushrooms and Finish

When the rice is nearly done, stir the sautéed mushrooms back in. Add Parmesan cheese and 2 tablespoons of butter. Stir until melted and creamy. Taste and adjust seasoning.

7. Serve

Spoon into bowls, garnish with chopped parsley and extra Parmesan if you like. Serve immediately while warm and creamy.
