Ingredients
-
4 corn tortillas
-
4 eggs
-
1 tablespoon oil (for frying eggs)
-
Salt and pepper to taste
-
Optional sides: refried beans, sliced avocado, crumbled queso fresco, sour cream
For the salsa:
-
2 medium tomatoes, chopped
-
1 small onion, finely chopped
-
1 garlic clove, minced
-
1 jalapeño or green chili, finely chopped (adjust to taste)
-
1 tablespoon oil
-
¼ teaspoon cumin powder
-
Salt to taste
-
A few fresh coriander (cilantro) leaves, chopped
-
Splash of lime juice (optional)
Instructions
1. Prepare the Salsa
Heat 1 tablespoon oil in a pan. Add onions and cook until soft. Add garlic and chopped jalapeño, sauté for a minute. Stir in tomatoes and cook until they break down into a thick sauce, about 10–12 minutes. Add cumin, salt, and a splash of lime juice if using. Stir in chopped cilantro at the end.
2. Warm the Tortillas
In a separate dry pan or on a hot griddle, warm each corn tortilla for about 30 seconds on each side until soft and slightly toasted. Keep them warm in a cloth or foil.
3. Fry the Eggs
In a non-stick skillet, heat a bit of oil and gently crack in the eggs. Fry them sunny side up or to your liking. Season with salt and pepper.
4. Assemble the Huevos Rancheros
Place two tortillas on each plate. Spoon a layer of warm salsa over each one. Carefully place a fried egg on top. Add a bit more salsa if you like it saucy.
5. Serve
Serve hot with refried beans, avocado slices, or crumbled cheese. A spoonful of sour cream or a drizzle of hot sauce adds extra depth.
Huevos Rancheros is a beautiful mix of textures and flavors—crisp tortillas, runny yolks, and smoky tomato salsa. It’s quick to prepare and packed with warmth and color, making it a favorite breakfast for those who enjoy savory and spicy meals.
