This recipe serves 1–2 people.
Ingredients
-
3 large eggs
-
¼ cup onion, finely chopped
-
1 small tomato, finely chopped (optional)
-
1 green chili, finely chopped (adjust to taste)
-
2 tablespoons fresh coriander (cilantro), chopped
-
¼ teaspoon turmeric powder
-
¼ teaspoon red chili powder (or paprika for less heat)
-
Salt to taste
-
Black pepper to taste
-
1 tablespoon oil or ghee
-
Optional: 2 tablespoons capsicum (bell pepper), finely chopped
Instructions
1. Beat the Eggs
Crack the eggs into a bowl. Add salt, black pepper, turmeric, and chili powder. Whisk until the yolks and whites are fully combined and frothy.
2. Add the Vegetables
Stir in chopped onion, tomato, green chili, coriander, and capsicum if using. Mix well so everything is evenly distributed in the egg mixture.
3. Cook the Omelette
Heat oil or ghee in a non-stick pan over medium heat. Once hot, pour in the egg mixture and spread it evenly. Let it cook for about 2–3 minutes, or until the bottom is golden and set.
Use a spatula to gently lift the edges. Flip the omelette carefully and cook for another 1–2 minutes on the other side until it’s fully cooked but still soft inside.
4. Serve
Slide the omelette onto a plate and serve hot. It goes perfectly with toast, buttered bread, or rolled up in a paratha.
Masala Omelette is a simple yet bold dish that combines the comfort of eggs with the vibrant flavors of Indian spices and herbs. It’s easy to make, endlessly customizable, and sure to brighten up your breakfast table.
