Mexican green enchiladas, or enchiladas verdes, are rolled tortillas filled with tender chicken and topped with a tangy green tomatillo salsa. Baked until hot and bubbling, they’re finished with fresh toppings like crema, cheese, and cilantro. It’s a comforting dish with a bright, slightly spicy kick. This recipe serves 4.
Ingredients
For the Green Sauce (Salsa Verde):
½ kg fresh tomatillos (husks removed and rinsed)
2–3 green chilies (jalapeño or serrano, adjust to taste)
2 cloves garlic
½ small onion
½ cup fresh cilantro leaves
Salt to taste
½ cup chicken broth or water
For the Enchiladas:
2 cups cooked shredded chicken
8 corn tortillas
1 cup grated cheese (Mexican blend, mozzarella, or Monterey Jack)
½ cup sour cream or Mexican crema
Vegetable oil (for softening tortillas)
Optional Toppings:
Sliced red onion
Chopped cilantro
Crumbled queso fresco or cotija
Avocado slices or guacamole
Lime wedges
Instructions
1. Make the Green Sauce
Place tomatillos, chilies, garlic, and onion in a pot. Cover with water and boil for 10 minutes until softened. Drain and blend with cilantro, salt, and chicken broth until smooth. Taste and adjust salt or spice.
2. Soften the Tortillas
Heat a little oil in a pan and quickly fry each tortilla for about 5–10 seconds per side to soften them. Drain on paper towels.
3. Assemble the Enchiladas
Preheat oven to 180°C (350°F). Pour a bit of green sauce into the bottom of a baking dish. Fill each tortilla with shredded chicken and a little cheese, roll tightly, and place seam-side down in the dish.
4. Add Sauce and Cheese
Pour the remaining green sauce over the rolled tortillas. Sprinkle with the rest of the cheese.
5. Bake
Bake for 15–20 minutes until heated through and the cheese is melted and bubbling.
6. Serve
Top with crema, onions, cilantro, and avocado if using. Serve with lime wedges on the side.
