Kaleji Masala is a classic South Asian dish made with chicken or mutton liver, cooked with onions, tomatoes, and aromatic spices. It’s rich in flavor, packed with nutrients, and often served as a special breakfast item or festive side dish. This recipe serves 3–4 people and comes together quickly, making it perfect for Eid or a hearty weekend meal.

500g chicken or mutton liver (washed and cut into bite-sized pieces)

2 medium onions (finely chopped)

2 tomatoes (chopped or blended)

1 tablespoon ginger paste

1 tablespoon garlic paste

1 teaspoon salt (adjust to taste)

1 teaspoon red chili powder

1 teaspoon turmeric powder

1/2 teaspoon cumin seeds

2–3 green chilies (slit)

Cooking Method
1. Prep the liver
Clean the liver properly, removing any membranes or veins. Soak in milk or lemon water for 15 minutes to reduce any strong smell, then rinse and drain.
2. Fry onions and spices
Heat oil in a pan. Add cumin seeds, let them sizzle. Add chopped onions and fry until golden. Stir in ginger and garlic paste, cooking for 2–3 minutes.
3. Add tomatoes and dry spices
Add tomatoes, salt, red chili powder, turmeric, and coriander powder. Cook until the tomatoes soften and the oil separates from the masala.
4. Cook the liver
Add the liver pieces and stir well. Cook uncovered on high heat for 4–5 minutes, stirring occasionally so it doesn’t release too much water.
5. Simmer gently
Reduce heat to medium-low. Cover and cook for 8–10 minutes, until the liver is tender. Do not overcook, or the liver will turn rubbery.
6. Finish with green chilies and garam masala
Add green chilies and sprinkle garam masala. Stir and cook for another 2 minutes. Turn off the heat and let it sit covered for a few minutes.
Serving Suggestion
Garnish with fresh coriander, ginger slices, and serve hot with naan, roti, or paratha. Add lemon juice just before eating for a bright flavor. Kaleji Masala pairs well with a cup of chai or as part of a larger desi meal spread.
