PUFF-PUFF RECIPE

Puff-Puff is a beloved West African street snack that is soft, airy, and slightly sweet with a golden, pillowy exterior. Originating from Nigeria and enjoyed across many African countries, it’s made from a simple yeast dough that’s deep-fried until perfectly puffed and delicious. Puff-Puff is often served at parties, festive gatherings, or simply as a quick snack with tea or soft drinks. While the traditional version is sweet, variations can include savory spices like chili powder or nutmeg for extra flavor. The irresistible aroma while frying makes it hard to wait before taking a bite, and its melt-in-the-mouth texture has made it a staple in African cuisine for generations.

Preparation Time

  • Preparation: 1 hour 15 minutes (includes rising time)

  • Cooking: 20 minutes

  • Total Time: 1 hour 35 minutes

Serving Size

Makes about 20–25 pieces (serves 6–8 people).

Ingredients

  • 2 cups all-purpose flour

  • ½ cup granulated sugar (adjust to taste)

  • 2 teaspoons instant yeast

  • ¼ teaspoon salt

  • ¼ teaspoon ground nutmeg (optional, for aroma)

  • 1½ cups warm water (or as needed)

  • Vegetable oil, for deep frying

Detailed Recipe

Step 1 – Mix the dry ingredients

In a large mixing bowl, combine the flour, sugar, instant yeast, salt, and nutmeg if using. Stir well so the ingredients are evenly distributed.

Step 2 – Add water and make the batter

Gradually add warm water to the dry mixture while stirring with a wooden spoon or spatula. The batter should be smooth, thick, and slightly stretchy — not as stiff as bread dough but not runny like pancake batter. Adjust water as needed.

Step 3 – Let the dough rise

Cover the bowl with a clean kitchen towel or plastic wrap and place it in a warm area. Allow the batter to rise for about 1 hour, or until it has doubled in size and is bubbly.

Step 4 – Heat the oil

Pour enough vegetable oil into a deep frying pan or pot to allow the Puff-Puff to float freely while frying. Heat the oil over medium-high heat to about 350°F (175°C).

Step 5 – Shape and fry the Puff-Puff

Using clean hands or a spoon, scoop small portions of the batter and drop them gently into the hot oil. Fry in batches to avoid overcrowding the pan. Stir occasionally to ensure even browning, frying each batch for 4–5 minutes until golden brown.

Step 6 – Drain and serve

Remove the Puff-Puff with a slotted spoon and place on paper towels to drain excess oil. Serve warm, plain, dusted with powdered sugar, or with a drizzle of honey for extra sweetness.
