Step 1 – Prepare the bananas
Peel the saba bananas and slice each one in half lengthwise. Lightly roll each banana piece in brown sugar until coated. This helps create the signature caramelized crust when frying.
Step 2 – Assemble the Turon
Lay one spring roll wrapper on a flat surface with a corner facing you (diamond shape). Place a banana half near the bottom corner, add 2–3 strips of jackfruit alongside it. Roll the wrapper over the filling, fold in the sides, and continue rolling tightly. Seal the edge with a little water to keep it closed during frying.
Step 3 – Heat the oil
In a deep frying pan or wok, heat enough vegetable oil to cover at least half the Turon rolls over medium heat.
Step 4 – Fry the Turon
Carefully place the rolls in the hot oil seam side down. Fry for 2–3 minutes per side, or until golden brown. Sprinkle a little extra brown sugar over the rolls while frying to create a crunchy caramelized coating.
Step 5 – Drain and serve
Once cooked, remove the Turon from the oil and drain on a wire rack or paper towels. Serve hot for the best crunch, though they can also be enjoyed at room temperature.
