Ingredients:

8 slices bacon, cooked and crumbled

3 fresh jalapeños, finely diced (remove seeds for less heat)

225 g (8 oz) cream cheese, softened

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese

1 teaspoon garlic powder

½ teaspoon smoked paprika

2 tablespoons chopped green onions

1 sheet puff pastry, thawed

1 egg, beaten (for egg wash)

Salt and pepper to taste

Instructions:

  1. Prepare the Bacon and Jalapeños

    Cook the bacon until crispy, then crumble and set aside. Finely dice the jalapeños, removing seeds if you prefer mild heat.

  2. Make the Filling

    In a bowl, mix cream cheese, cheddar, mozzarella, garlic powder, paprika, green onions, diced jalapeños, and bacon. Add a little salt and pepper, and stir until smooth and creamy.

  3. Prepare the Pastry

    Roll out the puff pastry sheet on a lightly floured surface. Cut it into 20 small squares (about 2×2 inches each).

  4. Fill and Shape

    Place a spoonful of the cream cheese mixture in the center of each pastry square. Fold the corners toward the center and pinch lightly to seal, or simply fold in half to make small pockets.

  5. Brush and Bake

    Place the bites on a parchment-lined baking sheet. Brush the tops with the beaten egg for a golden color. Bake in a preheated oven at 400°F (200°C) for 15–18 minutes, or until puffed and golden brown.
