 Cocada is a traditional Latin American coconut treat that’s chewy, sweet, and full of tropical flavor. It’s made mainly with shredded coconut, sugar, and milk, cooked until thick and golden. These coconut bites are perfect for dessert, gifting, or pairing with a cup of coffee. Whether you prefer them soft or crunchy, cocadas always deliver that irresistible coconut goodness.

Ingredients:

3 cups sweetened shredded coconut

1 cup granulated sugar

½ cup sweetened condensed milk

¼ cup whole milk or coconut milk

1 teaspoon vanilla extract

¼ teaspoon salt

1 tablespoon butter (for greasing the tray)

Instructions:

  1. Prepare the Pan:

    Grease a baking sheet or tray with butter or line it with parchment paper. Set aside.

  2. Cook the Mixture:

    In a medium saucepan, combine sugar, condensed milk, and milk. Stir over medium heat until the sugar dissolves completely.

  3. Add Coconut and Flavor:

    Add shredded coconut and salt. Stir continuously for about 10–15 minutes, until the mixture thickens and starts to pull away from the sides of the pan. It should become sticky and form a dough-like consistency.

  4. Shape the Cocadas:

    Remove from heat and stir in vanilla extract. While the mixture is still warm, use a spoon or small scoop to drop mounds onto the prepared tray. You can also shape them into small balls or flatten them slightly for a chewy texture.

  5. Bake (Optional for a Toasty Version):

    If you prefer golden edges, bake the cocadas at 350°F (175°C) for 10–12 minutes until lightly browned. Let them cool completely before serving.
