Instructions
-
Make the Custard Base:
In a medium saucepan, combine the heavy cream, milk, and half of the sugar. Warm over medium heat until the mixture is hot but not boiling. -
Whisk the Egg Yolks:
In a separate bowl, whisk the egg yolks with the remaining sugar until smooth and pale in color. -
Temper the Yolks:
Slowly pour about ½ cup of the hot milk mixture into the egg yolks while whisking constantly. This prevents the eggs from curdling. Then pour the tempered yolk mixture back into the saucepan. -
Cook Until Thickened:
Stir over low heat until the mixture coats the back of a spoon (about 170–175°F or 77–80°C). Remove from heat immediately. -
Add Flavor:
Stir in the eggnog, vanilla, nutmeg, cinnamon, and rum (if using). Mix well and let it cool to room temperature. -
Chill Completely:
Cover the mixture and refrigerate for at least 2 hours or overnight until completely cold. -
Churn:
Pour the chilled base into your ice cream maker and churn according to the manufacturer’s directions (about 20–25 minutes) until thick and creamy. -
Freeze:
Transfer to an airtight container and freeze for 2–3 hours to firm up before serving.
