Popovers Recipe

Popovers are light, airy rolls with crisp golden exteriors and soft, hollow centers. Made from a simple batter of eggs, milk, and flour, they puff dramatically in the oven—earning their name as they “pop over” the tops of the pan. Whether served with butter and jam for breakfast or alongside a roast for dinner, these classic baked treats are irresistible straight from the oven.

Ingredients

  • 1 cup all-purpose flour

  • 1 cup whole milk, at room temperature

  • 3 large eggs, at room temperature

  • ½ teaspoon salt

  • 1 tablespoon melted butter (plus more for greasing the pan)

Serving

  • Makes 6 large popovers

Instructions

  1. Preheat oven:

Heat oven to 425°F (220°C). Place a popover pan or muffin tin inside the oven to heat while you prepare the batter.

  2. Make the batter:

In a blender or mixing bowl, whisk eggs until light. Add milk, flour, salt, and melted butter. Blend or whisk until smooth and slightly frothy. The batter should be thin, similar to pancake batter.

  3. Prepare the pan:

Carefully remove the hot pan from the oven and brush each cup generously with butter.

  4. Fill and bake:

Fill each cup about halfway with batter. Quickly return the pan to the oven and bake for 20 minutes without opening the door.

  5. Reduce heat:

Lower the oven temperature to 350°F (175°C) and bake another 15 minutes until popovers are puffed, golden brown, and crisp.

  6. Serve:

Remove from the oven and prick each popover with a small knife to release steam. Serve immediately with butter, jam, or honey.

Tips

  • Room-temperature ingredients help the batter puff properly.

  • Do not open the oven during the first 20 minutes—this can cause them to collapse.

  • For a savory twist, add a pinch of grated cheese or herbs to the batter.
