Step 3: Combine and Chill
Add the dry ingredients to the wet mixture, stirring until a soft dough forms. Divide the dough in half, flatten into two discs, wrap in plastic, and chill for 30 minutes.
Step 4: Roll and Cut
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper. Roll out one disc of dough on a lightly floured surface to about ¼-inch thickness. Use a round or fluted cookie cutter to cut shapes. Cut small centers out of half the cookies (these will be the tops).
Step 5: Bake

Step 6: Assemble the Sandwiches
Spread about 1 teaspoon of jam on the bottom side of a full cookie. Place a cut-out cookie on top and press gently. Dust with powdered sugar before serving.
