Ingredients

  • 1 cup dried brown or green lentils, rinsed

  • 2½ cups vegetable broth or water

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 1 small carrot, grated

  • 1 celery stalk, finely chopped

  • ½ red bell pepper, finely chopped

  • 1 cup breadcrumbs

  • ¼ cup rolled oats

  • 2 tablespoons ground flaxseed mixed with 5 tablespoons water (flax egg)

  • 2 tablespoons tomato paste

  • 2 tablespoons soy sauce

  • 1 teaspoon dried thyme

  • 1 teaspoon smoked paprika

  • ½ teaspoon ground cumin

  • Salt and black pepper to taste

  • ¼ cup ketchup

  • 1 tablespoon maple syrup

  • 1 teaspoon balsamic vinegar

Instructions

  1. Cook the lentils:

    In a pot, combine lentils and broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes until tender and most liquid is absorbed. Drain any excess liquid and let cool slightly.

  2. Sauté the vegetables:

    In a skillet, heat olive oil over medium heat. Add onion, garlic, carrot, celery, and red bell pepper. Cook for 5–7 minutes until softened and fragrant.

  3. Mash and mix:

    In a large bowl, mash the lentils slightly, leaving some texture. Add the sautéed vegetables, breadcrumbs, oats, flax mixture, tomato paste, soy sauce, thyme, paprika, cumin, salt, and pepper. Stir until well combined.

  4. Shape the loaf:

    Line a loaf pan with parchment paper. Spoon the lentil mixture into the pan, pressing it firmly and smoothing the top.

  5. Prepare the glaze:

    In a small bowl, mix ketchup, maple syrup, and balsamic vinegar. Spread evenly over the top of the loaf.

  6. Bake:

    Bake at 375°F (190°C) for 40–45 minutes, until the top is golden and firm. Let rest for 10 minutes before slicing.
