 Chaat isn’t just one dish—it’s a whole style of Indian street food that brings together crunch, spice, tang, sweetness, and freshness in every bite. It usually features crispy fried dough or puffed rice, boiled potatoes or chickpeas, yogurt, chutneys, and spices. This recipe offers a basic but classic version of aloo chaat (potato chaat), perfect for beginners or anyone craving that street-style flavor at home. It serves 4.

Ingredients

  • 3 medium potatoes, boiled, peeled, and cubed

  • 1 small red onion, finely chopped

  • 1 tomato, deseeded and chopped

  • ½ cup plain thick yogurt (curd), whisked

  • 2 tablespoons green chutney (mint-coriander)

  • 2 tablespoons tamarind chutney

  • ½ teaspoon roasted cumin powder

  • ½ teaspoon chaat masala

  • ¼ teaspoon red chili powder

  • Salt to taste

  • Fresh coriander leaves, finely chopped

  • ½ cup fine sev (crispy gram flour noodles)

  • Pomegranate seeds (optional, for garnish)

  • Lemon wedges

Instructions

1. Prepare the Potatoes

Boil the potatoes until soft but firm. Peel and cut them into bite-sized cubes. You can shallow-fry or lightly roast them in a pan with a little oil for extra crispness if you like.

2. Arrange the Base

Place the potato cubes on a serving plate or in a shallow bowl. Sprinkle a little salt and chaat masala over them.

3. Add the Toppings

Layer the chopped onions and tomatoes over the potatoes. Pour the whisked yogurt evenly on top, followed by green chutney and tamarind chutney.

4. Spice It Up

Sprinkle cumin powder, red chili powder, and a little more chaat masala over the whole mix.

5. Finish with Crunch

Top the chaat with sev just before serving to keep it crisp. Add fresh coriander leaves and a few pomegranate seeds if you like. Serve with a squeeze of lemon.
