Ingredients
2 salmon fillets (about 150–180g each, skin on or off)
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon lemon zest
2 garlic cloves, minced
1 tablespoon fresh parsley, chopped
1 teaspoon fresh thyme or dill (or ½ teaspoon dried)
Salt and black pepper to taste

Instructions
1. Make the Marinade
In a small bowl, mix olive oil, lemon juice, lemon zest, garlic, parsley, thyme or dill, salt, and pepper.
2. Marinate the Salmon
Place salmon fillets in a shallow dish or zip bag.
Pour the marinade over the salmon and rub it in gently.
Let it marinate for 15–20 minutes (don’t leave too long or the acid will start to “cook” the fish).
3. Preheat the Grill
Heat a grill or grill pan over medium-high heat.
Oil the grates or pan lightly to prevent sticking.
4. Grill the Salmon
Place the salmon fillets skin-side down (if using skin-on).
Grill for about 4–5 minutes per side, depending on thickness, until the fish flakes easily with a fork.
Don’t move the salmon too much to keep it from breaking apart.
5. Serve
Transfer to a plate and garnish with lemon slices and extra herbs.
