They’re easy to whip up, great for lunchboxes, snack time, or teatime. The mix of textures—crisp cereal, chewy raisins, and tender cookie—makes every bite satisfying. This recipe makes about 20 cookies.

Ingredients

½ cup (115g) unsalted butter, softened

½ cup (100g) brown sugar

¼ cup (50g) white sugar

1 large egg

1 teaspoon vanilla extract

¾ cup (95g) all-purpose flour

½ teaspoon baking soda

¼ teaspoon salt

1½ cups cornflakes or bran flakes (lightly crushed)

½ cup rolled oats (optional for extra chew)

½ cup raisins

Instructions

1. Preheat the Oven

Preheat your oven to 175°C (350°F).

Line a baking tray with parchment paper.

2. Cream Butter and Sugar

In a large bowl, beat the softened butter, brown sugar, and white sugar together until light and fluffy.

3. Add Egg and Vanilla

Mix in the egg and vanilla extract until fully combined.

4. Add Dry Ingredients

In a separate bowl, whisk together flour, baking soda, and salt.

Gradually mix the dry ingredients into the wet mixture.

5. Stir in the Good Stuff

Gently fold in crushed cereal, oats (if using), and raisins until evenly distributed.

6. Scoop and Shape

Drop tablespoons of dough onto the prepared tray, spacing them apart as they’ll spread slightly.

Flatten gently with the back of a spoon or your fingers.

7. Bake

Bake for 10–12 minutes or until edges are golden brown and centers are just set.

Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
