Ingredients

2 cups cooked white or brown rice

2 cups cooked chicken, shredded or diced (grilled or rotisserie works well)

1 tablespoon olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

1 can (400g) crushed or diced tomatoes

1/2 cup tomato sauce or passata

1 teaspoon dried oregano

1/2 teaspoon dried basil

Salt and black pepper to taste

1 1/2 cups shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Fresh parsley or basil for garnish (optional)

How to Make Italian Chicken Rice Casserole

Preheat your oven to 180°C (350°F). Lightly grease a medium-sized baking dish.

In a pan, heat the olive oil over medium heat. Add chopped onion and cook for about 4–5 minutes until soft. Add garlic and cook for another minute.

Stir in the crushed tomatoes and tomato sauce. Add oregano, basil, salt, and pepper. Let it simmer for 5–10 minutes until slightly thickened.

In a large bowl, mix the cooked rice and chicken. Pour the tomato mixture over it and stir until well combined.

Spoon everything into the baking dish and spread evenly.

Top with mozzarella and Parmesan cheese.

Bake for 20–25 minutes, or until the cheese is melted and bubbly with light golden spots.

Remove from the oven and let it rest for a few minutes. Garnish with chopped parsley or basil if desired.
