Baked cod with ginger, lemon, and rosemary is a clean and flavorful dish that brings out the natural sweetness of the fish while infusing it with bright citrus, fresh herbs, and a gentle kick of ginger. It’s quick to prepare, gentle on the stomach, and ideal for a healthy lunch or dinner. This recipe serves 2.
Ingredients
2 cod fillets (about 150–180g each)
1 tablespoon olive oil
1 tablespoon fresh ginger, finely grated
1 lemon (zest and juice)
2 garlic cloves, minced
1–2 sprigs fresh rosemary (or ½ teaspoon dried)
Salt and black pepper to taste
Optional garnish: fresh parsley, lemon wedges
Instructions
1. Preheat the Oven
Set your oven to 200°C (400°F). Lightly oil or line a small baking dish with parchment paper.
2. Season the Cod
Pat the cod fillets dry with paper towels. Rub both sides with olive oil, then season with salt and black pepper. Place them in the baking dish.
3. Add the Flavors
In a small bowl, mix together the grated ginger, garlic, lemon zest, and juice. Spoon this mixture evenly over the cod fillets. Lay a sprig of rosemary over each fillet (or sprinkle dried rosemary on top).
4. Bake
Bake for 12–15 minutes, depending on the thickness of the fillets. The fish is ready when it flakes easily with a fork and turns opaque all the way through.
5. Serve
Serve hot with steamed rice, roasted potatoes, or sautéed greens. Garnish with chopped parsley or extra lemon wedges if desired.
Tips
Fresh ginger gives the best flavor—avoid powdered for this dish
Don’t overbake—the cod should stay moist and tender
Add a few cherry tomatoes or sliced zucchini to the baking dish for an all-in-one meal
This dish is quick, light, and full of clean, vibrant flavor.
