Cheesy bites are small, golden balls or pockets filled with melted cheese, wrapped in a soft dough or crispy coating. They’re ideal for party snacks, appetizers, or quick cheese cravings. These bites can be baked or fried and served with dips like marinara or ranch. This recipe makes 16–20 cheesy bites and serves 4.
Ingredients
For the Dough (Quick Version):
1 cup all-purpose flour
1 teaspoon baking powder
2 tablespoons butter, softened
¼ teaspoon salt
⅓ cup milk (plus more if needed)
For the Filling:
150g cheese (mozzarella, cheddar, or a mix), cut into small cubes
Optional: pinch of chili flakes, herbs, or garlic powder
For Coating (Optional if frying):
1 egg, beaten
½ cup breadcrumbs
Oil for frying (if frying) or melted butter (if baking)
Instructions
1. Make the Dough
In a bowl, combine flour, baking powder, salt, and butter. Mix in milk gradually to form a soft, non-sticky dough. Knead gently for 1–2 minutes until smooth. Let rest while you prep the filling.
2. Prepare the Cheese Filling
Cut cheese into small cubes, about 1–1.5 cm each. You can season them lightly with chili flakes or herbs if you like a bit more flavor.
3. Shape the Bites
Divide dough into 16–20 small balls. Flatten each ball into a small disc, place a cheese cube in the center, then pinch and roll the dough around it to seal completely.
4. Cook the Bites
To Bake:
Preheat oven to 200°C (400°F). Place bites on a baking tray lined with parchment. Brush tops with melted butter. Bake for 12–15 minutes or until golden and puffed.
To Fry:
Dip each bite in beaten egg, then roll in breadcrumbs. Heat oil in a pan over medium heat. Fry the bites in batches, 2–3 minutes until golden brown. Drain on paper towels.
5. Serve
Serve warm with ketchup, garlic mayo, marinara, or your favorite dipping sauce.
