Chocolate Lava Cake is a warm, personal-sized dessert that combines the richness of chocolate cake with a flowing, molten center. It’s soft on the outside and perfectly gooey inside. Served hot, it pairs beautifully with a scoop of vanilla ice cream or a sprinkle of powdered sugar. This recipe makes 4 individual cakes.
Ingredients
-
100g dark chocolate (at least 60–70% cocoa)
-
100g unsalted butter
-
2 whole eggs
-
2 egg yolks
-
1/4 cup (50g) granulated sugar
-
2 tablespoons all-purpose flour
-
Butter and cocoa powder for preparing the ramekins
Instructions
Prepare the Ramekins
Preheat your oven to 220°C (425°F). Butter four small ramekins (about 6oz each), then dust lightly with cocoa powder to prevent sticking. Place them on a baking tray.
Melt the Chocolate and Butter
In a heatproof bowl, melt the chocolate and butter together over a pan of simmering water (double boiler method). Stir occasionally until smooth. Remove from heat and let it cool slightly.
Mix the Eggs and Sugar
In another bowl, whisk the whole eggs, egg yolks, and sugar until the mixture is light and slightly thickened. This helps the cakes rise.
Combine Wet and Dry Ingredients
Pour the melted chocolate mixture into the egg mixture and gently whisk to combine. Sift in the flour and fold it in just until smooth.
