Zucchini Crust Pizza Recipe

Zucchini Crust Pizza is a smart and delicious twist on classic pizza, especially for those looking for a gluten-free or low-carb option. Instead of dough, the crust is made from grated zucchini, cheese, and egg, which bakes into a golden, firm base that holds toppings well. It’s a great way to use extra zucchini and sneak more vegetables into your meal. This recipe makes one medium-sized pizza, serving 2–3 people.

Ingredients

For the crust:

  • 2 medium zucchinis, grated

  • 1 egg

  • ½ cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • ¼ teaspoon garlic powder

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

For the toppings (customize to your taste):

  • ¼ cup pizza sauce or marinara

  • ½ cup shredded mozzarella cheese

  • Sliced bell peppers, mushrooms, olives, onions, cherry tomatoes

  • Dried oregano or Italian seasoning

  • Fresh basil (optional)

Instructions

1. Prepare the Zucchini

Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This is an important step—removing excess moisture ensures the crust will hold together and crisp up.

2. Make the Crust Mixture

In a mixing bowl, combine the squeezed zucchini, egg, mozzarella, Parmesan, garlic powder, salt, and pepper. Mix until everything is well combined into a sticky dough-like mixture.

3. Form the Crust

Preheat your oven to 220°C (425°F). Line a baking sheet or pizza pan with parchment paper and lightly grease it. Spread the zucchini mixture into a circle about ¼ inch thick. Press down and shape it with your hands or a spatula so the crust is even.

4. Bake the Crust

Bake for 15–20 minutes, or until the crust is firm and golden brown. If needed, flip it carefully and bake for another 5 minutes to crisp both sides (optional for extra firmness).

5. Add Toppings

Remove the crust from the oven. Spread a thin layer of pizza sauce over the top. Sprinkle with shredded cheese and your choice of toppings. Add a pinch of oregano or Italian herbs.

6. Final Bake

Return the pizza to the oven and bake for another 8–10 minutes, or until the cheese is melted and bubbly. You can broil it for an extra minute to get a golden top.

7. Serve

Let the pizza cool slightly before slicing. Top with fresh basil if you like and serve with a side salad or on its own.

Zucchini Crust Pizza has all the satisfaction of a regular pizza, with fewer carbs and a fresh veggie twist. It’s flavorful, filling, and a great way to enjoy pizza night in a lighter way.
