500–600g pumpkin (peeled and cut into cubes or wedges)
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper

How to Make Roasted Pumpkin
Preheat your oven to 200°C (400°F).
Line a baking tray with parchment paper or lightly grease it.
In a large bowl, toss the pumpkin pieces with olive oil, salt, pepper, and any optional herbs or spices you like.
Spread the pumpkin out in a single layer on the tray. Make sure the pieces aren’t overlapping—this helps them roast evenly and develop golden edges.
Bake for 25–30 minutes, flipping halfway through, until the pumpkin is soft inside and golden-brown on the edges.
Remove from the oven and let cool slightly before serving.
