For the crust:
2 1/2 cups all-purpose flour
1 teaspoon salt
1 cup (225g) cold unsalted butter, cut into small cubes
4–6 tablespoons ice water

4 cups fresh or frozen pitted cherries
3/4 cup sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 teaspoon almond extract (optional)

How to Make Cherry Pie
Start by making the crust. In a large bowl, mix the flour and salt. Add cold butter cubes and cut them into the flour using a pastry cutter or fingers until the mixture resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough into two discs, wrap in plastic, and chill for at least 30 minutes.
Preheat your oven to 190°C (375°F).
In a bowl, combine the cherries, sugar, cornstarch, lemon juice, vanilla, almond extract, and salt. Stir gently to coat the cherries well.
Roll out one disc of dough on a floured surface to fit a 9-inch pie dish. Transfer it to the dish, trimming the edges slightly.
Pour the cherry filling into the crust.
Roll out the second dough disc and either place it over the filling as a full top crust, or cut it into strips for a lattice pattern.
Seal the edges by pressing them together, then cut small slits in the top crust for steam to escape if using a full crust.
Bake for 45–50 minutes, until the crust is golden and the filling is bubbly.
If the edges brown too quickly, cover them with foil halfway through baking.
Let the pie cool for at least 2 hours before slicing to allow the filling to set.
