Ingredients

2 boneless chicken thighs or breasts

Instructions
1. Cook the Rice
Rinse rice under cold water until the water runs clear. Add it to a pot with water and a pinch of salt. Bring to a boil, then cover and simmer on low for 12–15 minutes until the rice is tender. Let it rest for 5 minutes, then fluff with a fork.
2. Prepare the Chicken
Lightly season the chicken with salt and pepper. Heat oil in a skillet over medium heat. Place the chicken skin-side down (if using thighs) and cook for 4–5 minutes until golden. Flip and cook the other side until fully cooked through. Remove and slice.
3. Make the Teriyaki Sauce
In the same pan, combine soy sauce, mirin, sugar, and water. Bring to a simmer. If you like a thicker sauce, stir in cornstarch dissolved in a tablespoon of water. Let the sauce bubble for 1–2 minutes until slightly thickened.
4. Glaze the Chicken
Return the sliced chicken to the pan and coat it in the teriyaki sauce. Cook for another 1–2 minutes until glossy and well glazed.
5. Serve
Scoop rice into bowls, top with sliced teriyaki chicken, and drizzle extra sauce over everything. Add sesame seeds, green onions, or steamed vegetables if desired.
