Shrimp-Stuffed Jalapeño Poppers Recipe

Shrimp-Stuffed Jalapeño Poppers take the classic spicy appetizer to a new level by adding juicy shrimp and creamy cheese filling inside roasted jalapeño halves. They’re smoky, cheesy, and a little bit fancy — perfect for parties, game nights, or any gathering that calls for bold bites.

Ingredients

  • 12 large jalapeño peppers, halved lengthwise and seeded

  • 1 tablespoon olive oil

  • 12 large shrimp, peeled, deveined, and chopped

  • 4 ounces cream cheese, softened

  • ½ cup shredded Monterey Jack cheese

  • 2 green onions, finely chopped

  • 1 garlic clove, minced

  • ½ teaspoon smoked paprika

  • Salt and black pepper to taste

  • 6 slices bacon, halved (optional, for wrapping)

  • Fresh cilantro or parsley, chopped (for garnish)

Serving

  • Serves 6 (2 poppers each)

Instructions

  1. Prepare the Jalapeños:

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Slice the jalapeños in half lengthwise and remove seeds and membranes. Brush lightly with olive oil and place them cut side up on the sheet.

  2. Cook the Shrimp:

In a skillet over medium heat, cook chopped shrimp for 2–3 minutes until just pink. Remove from heat and let cool slightly.

  3. Make the Filling:

In a bowl, combine cream cheese, Monterey Jack, green onions, garlic, smoked paprika, salt, and pepper. Stir in the cooked shrimp until well mixed.

  4. Fill and Wrap:

Spoon the shrimp-cheese mixture into each jalapeño half. If using bacon, wrap each popper with a half slice and secure with a toothpick.

  5. Bake:

Place on the prepared baking sheet and bake for 18–20 minutes, or until the bacon is crisp and the cheese filling is bubbly.

  6. Serve:

Let cool slightly before serving. Sprinkle with chopped cilantro or parsley for a fresh touch.

Tips

  • For extra flavor, grill the poppers instead of baking them.

  • Want more heat? Leave some seeds inside the jalapeños.

  • Swap Monterey Jack with pepper jack for a spicy twist.
