Wholesome Cocoa Date Oat Cookies Recipe

Cocoa date oat cookies are soft, chewy treats made with wholesome ingredients like rolled oats, mashed dates, and rich cocoa powder. They’re naturally sweetened with no refined sugar, and perfect for anyone looking for a healthier snack or dessert that still feels indulgent. These cookies come together quickly and are great for lunchboxes, coffee breaks, or late-night cravings. This recipe makes 10–12 cookies.

Ingredients

1 cup rolled oats

1/2 cup soft pitted dates (about 10–12), soaked in warm water for 10 minutes if dry

2 tablespoons cocoa powder

1 tablespoon peanut butter or almond butter

2 tablespoons coconut oil or any neutral oil

1/2 teaspoon vanilla extract

Pinch of salt

2–3 tablespoons water or plant milk (as needed)

Optional: dark chocolate chips, chopped nuts, or shredded coconut

How to Make Cocoa Date Oat Cookies

Preheat your oven to 175°C (350°F) and line a baking tray with parchment paper.

Place the soaked dates in a food processor and blend into a thick paste. Add a splash of water if needed to help it blend.

Add the cocoa powder, peanut butter, coconut oil, vanilla, and salt. Blend until smooth and well combined.

Transfer the mixture to a bowl and stir in the oats. If the mix feels too dry, add a tablespoon of water or milk at a time until you get a soft, cookie-dough-like consistency.

Fold in any extras like chocolate chips or nuts if using.

Scoop out spoonfuls of dough and shape into round cookies. Flatten them slightly on the tray.

Bake for 10–12 minutes. They will still feel soft when hot but firm up as they cool.

Let cool on the tray for a few minutes, then transfer to a wire rack.
