Grilled trout with rice is a simple and satisfying dish that highlights the delicate flavor of fresh fish. Ingredients
For the Trout
2 whole trout (cleaned, gutted, and scaled – about 300g each)
2 tablespoons olive oil
2 garlic cloves, minced
1 lemon (half sliced, half for juice)
Fresh herbs (parsley, dill, or thyme)
Salt and pepper to taste
For the Rice
1 cup basmati or jasmine rice
2 cups water
1 tablespoon butter or oil
Salt to taste
Instructions
1. Prepare the Rice
Rinse the rice under cold water until the water runs clear.
In a pot, combine rice, water, butter/oil, and a pinch of salt.
Bring to a boil, then reduce heat, cover, and simmer for 12–15 minutes until cooked and fluffy. Remove from heat and let it sit for a few minutes before fluffing with a fork.
2. Season the Trout
Pat the trout dry with paper towels.
Rub both inside and outside with olive oil, garlic, salt, and pepper.
Stuff the cavity of each fish with a few lemon slices and fresh herbs.
3. Grill the Trout
Preheat a grill or grill pan to medium-high heat.
Place the trout on the grill and cook for about 4–5 minutes on each side, or until the flesh is opaque and flakes easily with a fork.
Squeeze fresh lemon juice over the top before serving.
4. Serve
Plate the grilled trout with a side of warm rice. Add extra lemon wedges and a sprinkle of herbs if desired.
Tips
Use foil if grilling directly on open grates to prevent sticking
You can also cook the trout in a hot oven (200°C/400°F) for 15–20 minutes
