Ingredients
For the Tart Crust
1¼ cups (150g) all-purpose flour
¼ cup (30g) powdered sugar
½ cup (115g) cold unsalted butter, cubed
1 egg yolk
1–2 tablespoons cold water
For the Chocolate Filling
200g dark chocolate (around 70% cocoa), chopped
¾ cup (180ml) heavy cream
2 tablespoons unsalted butter
1 tablespoon sugar (optional, depending on your chocolate)
Pinch of salt
1 teaspoon vanilla extract
Instructions
1. Make the Crust
In a bowl, mix flour and powdered sugar.
Add cold butter and rub with fingertips until the mixture resembles coarse crumbs.
Add egg yolk and cold water, mixing until the dough just comes together.
Form into a disk, wrap, and chill for 30 minutes.
2. Blind-Bake the Crust
Preheat oven to 180°C (350°F).
Roll out the dough on a floured surface and place in a tart pan (about 9 inches).
Trim edges, prick the base with a fork, and chill for 10 minutes.
Line with baking paper and fill with pie weights or dry beans.
Bake for 15 minutes, remove weights, and bake for 10 more minutes until golden. Cool completely.
3. Make the Filling
In a small saucepan, heat cream until just simmering.
Pour over chopped chocolate in a heatproof bowl. Let sit for 1–2 minutes.
Stir until smooth. Add butter, salt, and vanilla. Stir until fully melted and silky.
4. Assemble the Tart
Pour chocolate filling into the cooled crust. Tap gently to smooth the surface.
Chill in the fridge for at least 2 hours, or until set.
5. Serve
Slice and serve chilled or at room temperature.
Optional toppings: whipped cream, fresh berries, sea salt flakes, or a dusting of cocoa powder.
