-
6–8 sheets filo pastry, thawed if frozen
-
2 cups fresh spinach leaves, washed and roughly chopped
-
1 cup feta cheese, crumbled
-
½ cup ricotta cheese
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
1 egg, beaten
-
3–4 tablespoons olive oil or melted butter
-
Salt and pepper, to taste
-
Sesame seeds (optional, for topping)
Instructions
-
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
-
Heat a pan with a drizzle of olive oil. Sauté onions and garlic until soft, then add the spinach and cook until wilted. Let cool slightly.
-
In a mixing bowl, combine the spinach mixture, feta, ricotta, and egg. Season with salt and pepper.
-
Lay a sheet of filo on a clean surface and brush it with olive oil or melted butter. Place a second sheet on top and repeat until you have a stack of 2–3 sheets.
-
Spoon some of the spinach and cheese mixture along one long edge. Roll the filo tightly into a long log.
-
Coil the log into a spiral shape and place it on the lined baking sheet. Repeat with the remaining filo sheets and filling until you have a complete spiral.
-
Brush the top of the pie with olive oil or butter, and sprinkle with sesame seeds if desired.
-
Bake for 25–30 minutes or until golden and crisp.
