Ingredients

  • 6–8 sheets filo pastry, thawed if frozen

  • 2 cups fresh spinach leaves, washed and roughly chopped

  • 1 cup feta cheese, crumbled

  • ½ cup ricotta cheese

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 egg, beaten

  • 3–4 tablespoons olive oil or melted butter

  • Salt and pepper, to taste

  • Sesame seeds (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. Heat a pan with a drizzle of olive oil. Sauté onions and garlic until soft, then add the spinach and cook until wilted. Let cool slightly.

  3. In a mixing bowl, combine the spinach mixture, feta, ricotta, and egg. Season with salt and pepper.

  4. Lay a sheet of filo on a clean surface and brush it with olive oil or melted butter. Place a second sheet on top and repeat until you have a stack of 2–3 sheets.

  5. Spoon some of the spinach and cheese mixture along one long edge. Roll the filo tightly into a long log.

  6. Coil the log into a spiral shape and place it on the lined baking sheet. Repeat with the remaining filo sheets and filling until you have a complete spiral.

  7. Brush the top of the pie with olive oil or butter, and sprinkle with sesame seeds if desired.

  8. Bake for 25–30 minutes or until golden and crisp.
