Ingredients
For the Chocolate Cakes:
1¾ cups all-purpose flour
¾ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
1 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar or lemon juice, rested for 5 minutes)
For the Cream Filling:
½ cup unsalted butter, softened
1 cup powdered sugar
1 cup marshmallow fluff or crème
1 teaspoon vanilla extract
Instructions
1. Preheat the Oven
Set your oven to 175°C (350°F). Line two baking trays with parchment paper.
2. Mix the Dry Ingredients
In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
3. Make the Batter
In another large bowl, beat butter and brown sugar until light and creamy. Add the egg and vanilla and beat well.
Alternate adding dry ingredients and buttermilk in batches, mixing just until combined. The batter will be thick and smooth.
4. Shape and Bake
Using a spoon or cookie scoop, drop rounded tablespoons of batter onto the trays, spaced apart. Flatten slightly with wet fingers or the back of a spoon.
Bake for 9–11 minutes, until the cakes are puffed and spring back lightly when touched. Cool on trays for 5 minutes, then transfer to a rack to cool completely.
5. Make the Filling
In a clean bowl, beat butter until creamy. Add powdered sugar and beat until fluffy. Mix in marshmallow fluff and vanilla. Beat until smooth and light.
6. Assemble the Whoopie Pies
Spread or pipe filling onto the flat side of half the cakes. Top with the remaining halves to make sandwiches. Press gently to seal.
7. Serve or Store
Serve right away, or chill in an airtight container for up to 3 days.
