Fruit Yogurt Cake Recipe

Fruit Yogurt Cake is a light, fluffy cake made with plain or flavored yogurt and filled or topped with fresh seasonal fruits. The yogurt keeps the cake incredibly moist, while the fruit adds natural sweetness and a burst of color. This cake works well for breakfast, tea-time, or dessert. This recipe serves 8.

Ingredients

For the Cake Batter:

1½ cups all-purpose flour

½ cup sugar

½ cup plain or vanilla yogurt

½ cup vegetable oil

2 large eggs

1½ teaspoons baking powder

½ teaspoon baking soda

1 teaspoon vanilla extract

Pinch of salt

Zest of 1 lemon or orange (optional)

For the Fruit:

1 cup mixed fruits (berries, peaches, cherries, or apples), chopped if large

Optional: extra fruit for topping before baking

Optional Glaze or Topping:

Powdered sugar for dusting

Warm fruit jam or honey for brushing the top

Whipped cream or more yogurt for serving

Instructions

1. Preheat and Prepare

Preheat the oven to 175°C (350°F). Grease and flour an 8-inch round or loaf cake pan.

2. Mix Wet Ingredients

In a large bowl, whisk together yogurt, sugar, eggs, oil, vanilla, and citrus zest until smooth.

3. Add Dry Ingredients

In a separate bowl, mix flour, baking powder, baking soda, and salt. Add to the wet mixture and stir until just combined. Don’t overmix.

4. Fold in the Fruit

Gently fold in your chosen fruit. If the fruit is very juicy (like berries), toss it with a little flour first to prevent sinking.

5. Bake the Cake

Pour the batter into the prepared pan and smooth the top. Add extra fruit on top if desired. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean. Let it cool for at least 10 minutes before removing from the pan.

6. Finish and Serve

Dust with powdered sugar or brush with warm jam for a shiny top. Serve plain, with whipped cream, or a spoonful of yogurt on the side.
